I went for the gold and celebrated my birthday wit I went for the gold and celebrated my birthday with a golden plate of @monogranofelicetti linguine and bottarga from @gustiamo ~ a luxurious Sardinian dish of grated dried mullet roe that is considered the caviar of the Mediterranean. Together with a flute of my favorite Prosecco from @sorellebroncawines 🥂, Zoom toasts with friends, and birthday cake with my children on FaceTime, it was a very different yet warm and glowing celebration filled with love 💛 🧡 ❤️

~ PAZZA FOR PIZZA ~ I’m crazy for pizza and ofte ~ PAZZA FOR PIZZA ~
I’m crazy for pizza and often can’t decide which topping I’m in the mood for ~ especially when I make it at home and have unlimited possibilities. That’s when I let my inner pizzaiola out to play and experiment with creative new combos (often dictated by ingredients on hand). But, what to do when torn between two equally tempting ideas? Have them both on the same pizza (you know, Marie Antoinette’s famous idea of having it all 💫). In fact, it’s a secret I didn’t invent but always took full advantage of in Italy. Since I’m often undecided by too many delicious choices, I’d ask my favorite pizzaiolo to “per piacere” make me two different pizza in one. I’m difficult, I know, but a smile goes a long way 😁. 

This time, my homemade Neapolitan pizza was 1/2 gorgonzola/apple/walnut (an ode to my Trentino roots) and 1/2 squash/ricotta/sage (delicate and savory). Both were amazing on my favorite “Bianca” base of Fior di Latte mozzarella and ones I will surely repeat for my upcoming Pizza at Home online cooking classes.

So, next time you can’t decide which pizza you are craving more...have both! Just don’t tell the pizzaiolo I sent you 😆.

The best part of making homemade egg pasta ravioli The best part of making homemade egg pasta ravioli? Eating it!

Yesterday, I celebrated the pasta making session using @qbcucina ’s Italian brass pasta wheel for my birthday #giveaway photo by eating the props. I cooked up this delizioso plate of beautifully cut frilly ravioli shapes and dressed them up even more in a light sausage + tomato sauce. The results? Deliciously satisfying + rewarding…did I mention that I love my job?

Happy Fat Tuesday {martedi’ grasso}! It’s Carn Happy Fat Tuesday {martedi’ grasso}! It’s Carnevale/Mardi Gras in Italy and, like most Italians, making + eating  Chiacchiere has been a yearly tradition since childhood. These light, crisp fried pastry ribbons covered in snowy confectioners’ sugar are the symbol of the festive indulgence season before Lent since, they are so good, you can’t eat just one. The staccato sounding name Chiacchiere (key-ah-kee-air-eh) means chitchat (with or without a bit of gossip ; ) but they are known by many different names throughout the country. This year I tried a quick experiment of painting the pastry with natural food tinctures to make them even more decorative and will revisit this technique again. 

Even if you don’t have chiacchiere today, eat something fried, frivolous, and decadent anyway…they don’t call it Fat Tuesday for nothing 🎉.

The beautiful masks 🎭 in the photo are from Venice, the city that celebrates Carnival in high style with elaborate costumes and lavish parties. These are my daughter’s and my masks and I will do a separate post to show my son’s show stopping mask.
